4.0 – 6.5 If the pH needs to be adjusted, the addition of a co-emulsifier is recommended (refer to “co-emulsifiers” section). If pH > 6.5, buffering effect of the chemical modification can lead to a decrease of pH during storage.
1- Dispersion step (T<40°C*): Sprinkle Pickmulse into water under high shear (rotor-stator) for 10 minutes to ensure the good individualization of the starch. The gelling agent must be added after this step. 2- Emulsification step (T<40°C*): Pour the oil phase into the water phase under high shear (rotor-stator) for 10 minutes. *To prevent prematurated starch gelatinization process. Alternative process : - Predispersion in glycerin (do not accelerate the dispersion step) - Indirect emulsion (water phase into oil phase) - One pot: non-optimal to properly disperse Pickmulse . To evaluate on a case-by-case basis.
Oil phase Can emulsify mixtures with all types in it (polar, non-polar, esters, vegetable oils, silicones...) Can emulsify pure nonpolar oil phases. To work with solid or paste with a low melting point (<35°C), heat the oil phase to a minimum to melt the ingredients, then cool down before emulsifying
